      Abstract: kefir, as a traditional fermented dairy product, has special nutritional value and health care effect. Studies have shown that there is a very close relationship between intestinal flora and cardiovascular disease. Probiotics and their derivatives (peptide, L-lactic acid, polysaccharide, etc.) in kefir fermented milk can regulate body functions such as central nervous system, immune system, metabolic pathway, and circulatory system, so as to avoid atherosclerosis and cardiovascular disease. Clinical trials show that xinruikang has a good health care effect on digestive system, immune system and prevention and treatment of cardiovascular diseases.

1 cardiovascular disease and risk factors
 
      Cardiovascular disease, also known as cardiovascular disease, refers to a series of diseases of the circulatory system, including heart, arteriovenous and microvascular diseases, such as hypertension, hyperlipidemia, hyperglycemia, cardio cerebrovascular sclerosis, stroke, etc. Cardiovascular disease has the characteristics of "high incidence, high mortality, high disability rate, high recurrence rate" and "many complications".
 
      The risk factors of cardiovascular disease can be divided into traditional risk factors, potential risk factors and socio-economic / psychological and behavioral factors, but they can be summed up as follows: hypertension, hyperlipidemia, diabetes, obesity, smoking, drinking, lack of exercise, etc.
 
      Hypertension is the biggest and independent risk factor of cardiovascular disease. High blood pressure is easy to cause atherosclerosis, further damage to cardio cerebral vessels, kidneys, arteries and so on, and enhance the incidence of coronary heart disease. The occurrence of vascular occlusion and rupture in patients with hypertension is about 20 years earlier than that in patients with normal blood pressure.
 
      Epidemiological investigation found that hyperlipidemia patients are prone to coronary heart disease. The mechanism of atherosclerosis caused by hyperlipidemia: when the artery is damaged (caused by hypertension and smoking, etc.), the lipid will deposit in the arterial intima and become a slightly raised focus. Then, the fibrous connective tissue of the arterial intima will proliferate, surround and fix it, form a plaque, soften and ulcer in the deep layer of the plaque, and form a yellow congee.
 
      Hypertension, obesity, insulin resistance, hypertriglyceridemia and other factors often exist together, which can accelerate atherosclerosis. The intake of carbohydrate in China is generally more, and diabetes mellitus and abnormal glucose tolerance are not uncommon. Many people found hyperglycemia after routine physical examination or coronary heart disease attack. 70-80% of diabetic patients died of atherosclerotic diseases, followed by small vessel disease.
 
      Smoking can affect the function of vascular endothelium, make cardiovascular disease unstable, cause thrombus, lead to stroke, myocardial infarction and so on. The results of epidemiological studies show that the risk of smoking leading to coronary heart disease is directly proportional to the amount of smoking; the degree of arteriosclerosis in smokers is much more serious than that in non-smokers; smoking not only affects the occurrence of coronary heart disease, but also affects the prognosis of myocardial infarction; passive smokers suffer the same harm; the younger the age, the higher the relative risk.

      Kefir, as a traditional fermented milk beverage, has special nutritional value and health care effect, and is deeply loved by people. Kefir grains (kg) can make kefir yoghourt more nutritious and digestible than ordinary yoghourt. Many fermentation products secreted by its constituent bacteria have physiological health care functions, such as regulating circulation and respiratory system functions, improving digestive function, improving calcium absorption and utilization, etc., especially kefir has the functions of anti-oxidation, lowering blood pressure, lowering cholesterol and anti swelling Tumor and other physiological health care functions have become the focus of research and development in recent years.       The content of non protein nitrogen and free amino acids in kefir fermented milk is more than that in ordinary milk. Free amino acids include proline, leucine, lysine, ornithine, histidine, etc.; carbohydrates mainly include lactose, galactose, glucose and polysaccharides produced by microbial fermentation; vitamins mainly include B vitamins, such as B1, B2, B6, B12 and folate, etc., and there are many people The essential mineral elements, such as calcium, magnesium, potassium, phosphorus and iron, are rich in nutrition and have obvious health care effect after long-term drinking.
 
      The antioxidant pressure function of kefir fermented milk may reduce the production of proinflammatory factors in the circulatory system through probiotic strains and other metabolic derivatives (such as peptide, L-lactic acid, polysaccharide, etc.), so as to achieve the effect of antioxidant and anti-inflammatory (see Figure 1.). Kefir fermented milk can avoid the damage of endothelial cell function in SHR, mainly by reducing the production of free radicals and increasing the utilization of nitric oxide. In addition, kefir fermented milk can promote the release of EPC (endothelial cells) to the circulatory system and the repair of vascular endothelium.

      Arteriosclerosis is a process of slow formation. In the process, it can be found that there will be plaque on the wall of the tube, which is caused by the aggregation of lipids, platelets and immune cells, and then lead to dangerous complications such as myocardial infarction and stroke. In the process of atherosclerotic atherosclerosis, the inflammatory response of vascular endothelial cells is one of the most important risk factors. It is closely related to the risk factors such as hypertension, obesity, hyperlipidemia and diabetes, and causes the inflammation and damage of endothelial cells under the interaction. It has multiple functions such as inhibiting inflammation, antihypertensive, cholesterol formation and free radical scavenging. At the same time, the side effects of captopril are far less than those of current drugs, and it is more suitable for patients with cardiovascular diseases (see Figure 2).

      Hypertension is an important factor that causes cardiovascular disease, and the main reason for the rise of blood pressure is the angiotensin converting enzyme (ACE) in the body. Ace will change the inactive vasoconstrictor I into the active vasoconstrictor II, and lead to the rise of blood pressure. Therefore, if ACE activity can be effectively inhibited, blood pressure can be reduced. Kefir contains a variety of microbial metabolites with health promoting activities, such as antibacterial, antihypertensive, antimutagenic, antitumor and antiallergic effects. In particular, kefir has been detected to contain a high amount of peptide (see Figure 3), which is highly recommended for hypertensive patients. Compared with common antihypertensive drugs, kefir peptide (corecept) has incomparable advantages in regulating blood pressure (see Table 1.).

      In conclusion, kefulin (xinruikang) can activate nitric oxide synthetase in vivo, relax blood vessels, avoid scale, increase elasticity and avoid myocardial fibrosis; avoid congee arteriosclerosis and fibrosis caused by hyperlipidemia and hypercholesterolemia; improve renal arteriosclerosis and fibrosis or renal tissue lesions caused by hypertension. In addition to anti-tumor, aid digestion and promote immunity, xinruikang can prevent stroke by eliminating free radicals, inhibiting inflammation, increasing nitric oxide, repairing blood vessels, regulating blood pressure and hemolytic thrombus, improving blood vessel elasticity, preventing myocardial fibrosis, and improving the quality of renal blood vessels and renal silk balls. It is a good health care product for patients with three high and diabetes mellitus (see Table 2.).
